At Essie & Kelsey’s Table, we believe that cooking can be a mindful practice, an art that allows us to connect deeply with the ingredients we use and the nourishment we offer ourselves.

Kelsey recently found inspiration in one of her favorite cookbooks from the Occidental Arts and Ecology Center. With a foreword by renowned chef Alice Waters, this book is brimming with vibrant soups crafted to heal and delight.

One of Kelsey’s gems is the roasted fennel soup, which she joyfully enhanced with sweet potatoes and leeks.

In my kitchen, I love to play with flavors,” Kelsey shares.

Deglazing the roasted vegetables in a splash of white wine felt like a soulful dance, adding depth to the already comforting soup.
